Technical Data

Vintage: 2019

Production: 643 bottles

Varieties: 100% Carinyena

Winemaking: Harvested by hand, selection of the vines with less natural grape load. Pre-fermentative maceration for 6 days. Spontaneous fermentation for 18 days. Unclarified. Very smooth filtering at bottling.

Ageing: Aged in 500L Slavonian oak barrels and cement eggs for 15 months. Later in the bottle for 30 months.

Bottling: August 7, 2020, waning gibbous moon

Winemaker’s note: They say that bottling the wines in Luna “turning off” is positive for aging. Powerful red color, medium layer. Aromatically it is complex. It has been a success to carry out a cold maceration, the extraction of the skins has been very smooth. Perhaps we could even say that in the mouth it is defined as a “fresh” Cariñena. We are very happy, we are going to gain personality. We bottle it to finish refining it.

Treatment: Organic production, 1st year of regenerative viticulture. Planting of Legumes (times, herbs and peas), Cruciferous (White mustard) and Poacias (Avada and Barley), in alternate rows. Little fermented com- pound, low C/N ratio. We want to provide organic matter and nitrogen immediately.

Medium production: 4.100 kg/ha
