Vinification: Plots selected and harvested by hand. Separate cold maceration in tanks. Fermentation with selected own yeast.
Aging: Refined in oak barrels and cement egg for 24 months and 30 months in bottle.
Winemaker’s note: A complex varietal blend. It is the challenge of achieving excellence with our native varieties. Aromatically it is prepared to stand the test of time. The texture in the mouth conveys the finesse of these grapes in this vintage.

Treatments: Organic production, 2nd year of regenerative viticul- ture. Planting of Legumes (times, herbs and peas), Cruciferous (White mustard) and Poacias (Avada and Barley), in alternate rows. Little fermented com- pound, low C/N ratio. We want to provide organic matter and nitrogen immediately.
